The first time I made this recipe I used my Belgium Waffle maker because I LOVE Belgium Waffles… and they are almost impossible to find anywhere gluten-free. I topped my waffle with Coconut Nectar Syrup, whipped cream and blackberries. Carefully cutting a corner section off of the waffle, I made sure there was some whipped cream and a berry on it, then I slowly and delicately put it in my mouth (the anticipation was part of the fun for me).
It was fluffy and packed with flavor. I remember closing my eyes and thinking I’d gone to heaven. I can’t say that you’ll have that experience, but I haven’t made this recipe for anyone who did not like it. I always make a double batch and refrigerate the extras in individual zip lock bags. I just pull one out and reheat it in my Breville countertop oven for a few minutes (you could microwave them but I don’t use a microwave). If I have to leave the house in a rush and don’t have time to eat I will cut one into pieces and take it along in a zip lock bag….they are not bad at room temperature and easy to eat with your fingers.
One of these thick delicious waffles is a meal in itself because of the high protein in the eggs and cottage cheese. You may want to consider using LacTaid Cottage Cheese if you are lactose-intolerant. It’s a little pricier than regular cottage cheese, but well worth the extra money to avoid any digestive upset after such a deliciously decadant breakfast…and still much cheaper than having wheat-filled waffles or pancakes at any restaurant.
1 Cup Cottage Cheese (for lactose=free use LacTaid brand)
1 Cup Bob’s Red Mill Gluten-Free Oats

In a blender, mix all ingredients until smooth
Makes 6 pancakes or 4 thick Belgium Waffles
Serve with syrup, whipped cream and fresh berries for a real treat!
