I love beets…in any form, but especially pickled. Red beets are great for our bodies..they are low in calories and a great source of nutrients, including fiber, folate and vitamin C. Beets also contain nitrates and pigments that may improve athletic performance.
Lastly, beets are delicious and versatile…they help lower blood pressure, fitting well into a healthy and balanced diet.
One bunch organic red beets (depending on size 3-5 beets/bunch)
1 Cup Apple Cider Vinegar (with “mother” such as Bragg’s ACV)
3 Cups Water
2 Tablespoons Organic Garlic Powder
1 Tablespoon Organic Onion Powder
1 tea. black pepper
1/4 tea. red pepper flakes
Goat Cheese (upon serving, crumble over the beets)
Sliced Red Onion (as preferred)
Walnuts (as Preferred)
Cut greens off beets approximately 1/4″ above the beet, leaving the root on (leaving the root on keeps the juice in the beet during the cooking process). Set greens aside to use in a separate recipe later (see Sauteed Beet Greens with Red Onions).
Scrub beets with a vegetable brush (if you are not using organic beets, scrub them with a veggie wash and rinse well).
Place 1 Cup Water in Instant Pot and place beets on a steamer rack.
Put lid on Instant Pot, Seal and set Instant Pot on Manuel (it will default t0 30 minutes). After 30 minutes, you can either release steam manually or let it release on its own (this will take about 10 minutes). Remove Lid.
Carefully remove the hot beets and slide the skins off, using a paring knife as needed. Cut off the beet roots. Quarter or slice the red beets.
Pour the vinegar, water, garlic powder, onion powder, black pepper and red pepper flakes into a large mason jar. Add quartered or sliced beets. You can Salt to taste. As a congestive heart patient, I choose not to use salt…the garlic and onion powders give great taste without the additional sodium. The longer the beets marinate in the vinegar mix the better they taste. Beets will keep for several weeks in the refrigerator.
- Scoop some beets and juice into a small dish and crumble goat cheese over them. Season with black pepper to taste.
- Scoop beets onto a bed of romaine lettace (or spring mix) with sliced red onion and walnuts, if preferred.
